One of the questions I get asked most often isn’t about a specific diet or supplement — it’s “what do I do with all this food I have left over?” Between meal prepping, family dinners, and take-out portions, leftovers pile up fast. The good news: with a little creativity, they don’t have to go to waste, and they can actually make your week easier.

Why This Matters More Than You Think

Reducing food waste isn’t just good for the planet — it’s good for your wallet and your routine. When you have a plan for your leftovers, you spend less time deciding what to eat (decision fatigue is real) and you get more mileage out of the groceries you already bought.

My Go-To Leftover Strategies

1. Turn dinner into a bowl. Extra roasted vegetables, a scoop of grains, and a protein you already have on hand come together fast in a grain bowl. Add a sauce or dressing and it feels like a brand-new meal.

2. Make a frittata. Almost any vegetable or protein leftover can go into eggs. Whisk a few eggs, toss in your leftovers, and bake until set. It works for breakfast, lunch, or dinner.

3. Build a soup base. Odds and ends of vegetables, a bit of leftover protein, and some broth can become a comforting soup in 20 minutes. Freeze extra portions for a night when cooking feels like too much.

4. Repurpose into a wrap or sandwich. Leftover roasted chicken, veggies, or even last night’s stir-fry can go straight into a tortilla or between two slices of bread with a spread of your choice.

5. Freeze what you won’t eat in 3 days. If you know you won’t get to something soon, freeze it right away rather than letting it sit in the fridge until it’s no longer appealing (or safe) to eat.
